Black Vinegar is the English name for the Japanese vinegar called Kurosu / Kurozu ("kuro" means "black" in Japanese, "zu" or "su" means "vinegar"). It is a matured vinegar that is made from rice.
We offer Black Vinegar in a large variety of flavours and products from the best black vinegar producing company in Japan. Black vinegar is a good health supplement as it is said to improve blood circulation and to counter fatigue.

This is mainly a factory which produces Black Vinegar. The vinegar sits in the vessels for two years or more before maturing enough to make the quality vinegar that Kakuida produces.

With the pots of kurozu (black vinegar) in the foreground, and against a backdrop of tree-covered hill, the scene is set for a stunning view of the black vinegar restaurant pictured here.

This is the shop located on the first floor of the restaurant. You can buy all these products online on this website at the same price at the shop (see menu).

Today black vinegar is not only used in food to enhance the eating experience while also improving health, but it is also prepared as a base for some delicious-tasting beverages. Many people also use black vinegar to help them with dieting when trying to lose weight (see this picture).
Vinegar helps you achieve various health improvements such as recovery from fatigue, improvement in blood flow, weight-loss, heat exhaustion prevention, beautiful skin, cholesterol reduction, blood pressure reduction, appetite improvement, constipation cures, relief from bad blood circulation (cold feet and hands), calcium intake and many other reasons.

You can take vinegar in a wide variety of ways. Many people drink it after diluting it with water, mixed with fruit juice, mixed with honey, carbonated water, or just with water. Some choose to drink it straight for good health, while other methods used to intake vinegar include diluted with water, vinegar mixed with fruit juice, vinegar mixed with honey or carbonated water or straight.
The most popular methods that really suit uninitiated tastes would probably be the fruit black vinegars (the Kakuida Apple Black Vinegar, and the Kakuida Blue Berry Black Vinegar are really popular), as a salad dressing to give your food that special "je ne sais quoi", or as the "portable bottle" which is quite small and so handy for those restaurant lunches to balance the healthiness of that 7 ounce T-bone steak.
You can drink it straight, or mixed with water, but it is an acquired taste. The fruit vinegars are just delicious to pretty much anyone who tastes them (visit the shop).
Black vinegar is made from rice. Kakuida make this special product in the most famous area for Black Vinegar in Japan, Fukuyama. It's popular throughout Asia, but the main market is Japan at the moment. It's made through a process of fermentation and takes over two years to mature.
